\u00faltimos a\u00f1os, el cambio clim\u00e1tico ha comenzado a dejar una huella profunda en la industria del vino. Las altas temperaturas est\u00e1n acelerando la maduraci\u00f3n de las uvas, provocando un desequilibrio entre su contenido de az\u00facar y el momento \u00f3ptimo de cosecha. Esto ha llevado a que muchos vinos, especialmente los de alta gama, presenten niveles de alcohol m\u00e1s elevados de lo deseado, afectando tanto su calidad como su valor en el mercado. A su vez, otros sectores, como el de los vinos a granel o el pisco, requieren justamente lo contrario: un aumento en la eficiencia de conversi\u00f3n de az\u00facar en alcohol. Depende de factores gen\u00e9ticos complejos y de las condiciones ambientales en las que ocurre la fermentaci\u00f3n. Sin embargo, los m\u00e9todos cl\u00e1sicos de mejoramiento no han logrado abordar completamente esta complejidad. Las t\u00e9cnicas tradicionales de mapeo gen\u00e9tico son limitadas y no permiten identificar con precisi\u00f3n c\u00f3mo interact\u00faan los genes entre s\u00ed ni c\u00f3mo responden al entorno. En lugar de modificar el vino una vez que ya est\u00e1 hecho, la propuesta es desarrollar levaduras que puedan producir m\u00e1s o menos alcohol seg\u00fan lo que se necesite.<br><br>\nPara lograrlo, el equipo trabajar\u00e1 con levaduras naturales recolectadas en distintas regiones, que ya muestran diferencias en su forma de transformar el az\u00facar de la uva en alcohol. A partir de estas, se realizar\u00e1n cruces entre cepas para obtener nuevas \u201cfamilias\u201d de levaduras. Luego, se analizar\u00e1n cuidadosamente sus comportamientos y se estudiar\u00e1n sus caracter\u00edsticas gen\u00e9ticas, observando qu\u00e9 diferencias explican por qu\u00e9 unas producen m\u00e1s alcohol y otras menos.<br><br>\nEl gran valor de este enfoque es que no se usan t\u00e9cnicas de modificaci\u00f3n gen\u00e9tica prohibidas en muchos mercados, sino m\u00e9todos tradicionales de mejoramiento similares a los que se usan desde hace siglos en plantas y animales. Adem\u00e1s, se aplicar\u00e1n tecnolog\u00edas avanzadas para estudiar c\u00f3mo se activan los genes de estas levaduras y c\u00f3mo interact\u00faan con su entorno. Generar familias de levaduras con rendimientos alcoh\u00f3licos opuestos (altos y bajos), a partir de cruzamientos seleccionados desde una poblaci\u00f3n F1.<br><br>2. Identificar alelos y genes seleccionados positivamente mediante secuenciaci\u00f3n de ADN y validaci\u00f3n funcional con t\u00e9cnicas como CRISPR-Cas9.<br><br>3. Analizar transcriptomas y perfiles metabol\u00f3micos de cepas extremas para identificar los mecanismos moleculares que regulan la eficiencia fermentativa.<br><br>4. Se trata de una soluci\u00f3n que no recurre a organismos transg\u00e9nicos, lo que facilita su aceptaci\u00f3n en mercados internacionales donde estas tecnolog\u00edas a\u00fan enfrentan restricciones.<br><br>\nEl impacto esperado va mucho m\u00e1s all\u00e1 del laboratorio. Si las cepas desarrolladas logran transferirse con \u00e9xito a la industria, podr\u00edan mejorar la calidad del vino chileno, aumentar su competitividad global y adaptarlo a nuevas exigencias de consumo.
