Sin embargo, su utilizaci\u00f3n directa est\u00e1 limitada debido a la alta incidencia de intolerancia en la poblaci\u00f3n mundial. Los procesos enzim\u00e1ticos actuales ofrecen un rendimiento bajo, y la separaci\u00f3n de los productos de reacci\u00f3n epilactosa, lactulosa y lactosa no transformada,  es compleja debido a su similitud estructural. Para ello se trabajar\u00e1 en la optimizaci\u00f3n de la s\u00edntesis enzim\u00e1tica mediante enzimas especializadas (C2E), la cristalizaci\u00f3n selectiva para recuperar lactosa no transformada, la hidr\u00f3lisis y fermentaci\u00f3n selectiva para eliminar az\u00facares residuales y facilitar la purificaci\u00f3n, y el an\u00e1lisis econ\u00f3mico del proceso completo. Optimizar condiciones de reacci\u00f3n enzim\u00e1tica para maximizar la productividad.<br><br>3. Mejorar el rendimiento de cristalizaci\u00f3n y estrategias de reciclaje de lactosa.<br><br>4. Seleccionar enzimas y microorganismos para etapas de hidr\u00f3lisis y fermentaci\u00f3n con alta selectividad.<br><br>5. Adem\u00e1s de generar un nuevo mercado para la epilactosa, se fomentar\u00e1 el desarrollo de procesos sustentables y alineados con los principios de la qu\u00edmica verde, contribuyendo a reducir desperdicios y cerrar ciclos productivos.
