Reemplazar esta grasa sin alterar la textura, jugosidad, sabor y estabilidad del producto es un gran desaf\u00edo tecnol\u00f3gico. Estas matrices permiten incorporar aceites vegetales ricos en \u00e1cidos grasos mono y poliinsaturados, como el de oliva o linaza, mejorando el perfil lip\u00eddico del producto. A trav\u00e9s del uso de bigeles formulados con aceites vegetales ricos en \u00e1cidos grasos insaturados y la incorporaci\u00f3n de compuestos bioactivos, se espera mejorar el perfil lip\u00eddico de los alimentos, aportando beneficios cardiovasculares sin comprometer sus propiedades tecnol\u00f3gicas ni sensoriales. Adem\u00e1s, el desarrollo de este sistema representa una plataforma vers\u00e1til que podr\u00eda adaptarse a otras matrices alimentarias como quesos untables, galletas o productos de pasteler\u00eda, ampliando su aplicabilidad en la industria.
